I was taking out the trash at work a few minutes ago and when I went to grab mine out of my office, I noticed it felt so light.  I looked in and all there was in there were lime peels and avocado peels, it was so satisfying.  No wrappers from a burger I might have had for lunch, or cheese and crackers… it was just produce.  It was a nice change.

So I met a goal, ok I’m exactly 0.4 lbs away from being under 200 lbs!  Since I got off the “meds” my old ND had me on, I’ve pretty much stayed steady at 215 to 220 lbs.  Even though I eat much more healthy than anyone else I know, I still stayed there.  HOWEVER, it’s time to celebrate!  Goodbye to those nasty pounds that are now gone!  I’m down 15 lbs and the numbers continue to fall.  Praise GOD!!

I have had some heated food this week, still all plant-based.  Morrell mushrooms were a special treat for me.  This weekend I also plan on having some homemade beans on some homemade non-gmo corn tortillas (which is just corn & water) with tons of fresh produce on top, no cheese.  In fact, I’m pretty sure dairy is going to be out for me after this whole experience.  I’m 99.9% sure my body can’t process dairy correctly.  I also plan on staying away from sugar.  Not in its natural forms, I will still consume honey and maple syrup and DATES especially, but cane sugar is out.  Although I will still need to buy it for my kefir water. Does anyone have a good source of cheap organic dates?  Please share with me if you do!

Last but not least… I noticed for a few nights that I had the WORST trouble falling asleep then didn’t get much sleep.  I chalked it up to Hubby not being there that night, but it happened again when he got back.  So I got this wild idea that maybe I had too much energy and I wasn’t spending enough of it.  Yesterday I went on a long walk at work (my boss believes in health and offers us time to go walk or run or whatever) and went home and slept like a baby.  So even though I get home and FEEL tired I do have to push myself to workout daily to burn off this excess fat and energy.

That’s my news.  I’m pretty happy with the results.  My moods are the biggest change and I feel even and more in “control” and less like a crazy person with crazy emotions trapped in a body I can’t control.  God is good to me!

I have subscribed to a great magazine for years now, called Herb Companion.  I remember the first issue I got, I was looking through it and was shocked to see that they printed actual recipes for lotions,bath salts, teas, food, drinks…etc.  In fact I wrote a letter to the editor I was so impressed and it was printed in the next issue. 🙂  I was looking through the May issue this morning and noticed something great, it talks about greens, leafy, beautiful, healthy greens.  Since I’ve been juicing greens have become a big deal to me.

I can honestly say I’ve never been much of a vegetable person, the only greens in my house growing up was iceberg lettuce.   Occasionally I will go at lunch to produce shop, saves me time after work.  I had loaded up the fridge at work with all sorts of beautiful food and my coworker asked me what the chard was.  I had never had experience with chard before I met my husband.  His food growing skills would impress some of the worlds best growers.  I learned all about kale, chard, spinach and all the other leafy greens I never had any contact with before him.  So now it’s your turn to get acquainted with some very nutritious food.

Kale.  I love Kale.  In the dead of winter some of the most beautiful kale stands erect, unaffected by the harsh cold weather.  While other things can’t survive, kale does and brings you nutrients through the winter.  It is lovely in salads, you can stir fry it, or of course juice it.  Kale is high in vitamins A, B6, C, and K.  High in antioxidants lutein, beta-carotene, glucosinolates (which are anticancer and give bitter tastes…think dandelion), kaempferol and more.

God’s little rainbows… Chard.  I never knew greens could be so beautiful! Hubby got some rainbow chard and grew it last year.  I honestly didn’t know enough about it to make much with it.  It went in our salads and to the bunny… It’s sunny disposition is welcome in any of my gardens.  The stocks can vary in colors, from white, to red, yellow and orange.  The stocks remind me of celery, in the way that they are stringy like celery.  For this reason I seem to have to chop it up a bit finer than other produce to juice, because those strings happen to get caught easily.  Chard has vitamins C and E as well as manganese, zinc, and antioxidants beta-carotene, lutein, kaempferol, quercetin and zeaxanthin.

Beet Greens, or simply the tops of the beet.  I didn’t know beet greens were edible until several years ago when our friends offered us some.  Recently we have been buying organic beets at the store for our juicing.  Let me say that some beets are GMO, so please buy organic only.  Not only does the beet itself give your juice a wonderful red color but the greens can be used as well.  When I juice, I cut my beet in half and take half the greens and juice them.  The stocks of the greens are similar to chard but a little less stiff.  These guys are rich in flavonoid antioxidants, they contain vitamin A, potassium, calcium and iron.   They also have beta-carotene, lutein and zeaxanthin.

Well isn’t God funny sometimes!?  I was sure 100% last week that my time at my job was ending.  That it was time to make a change and I made a move, but nothing has happened.  In fact I prayed, Lord if this is not where you want me to be (the new job I applied for) close that door and make me know that I am supposed to stay.  Boy, Oh Boy, did He answer that prayer for me!

I had the most amazing weekend.  My mental health Friday was exactly what I needed.  Three whole days off of work and a beautiful sunny Oregon weekend ahead of me, it was wonderful!  We got out into the yard, got wet in our creek, played with the dogs and the next door neighbor kids.  I even got a sunburn!  Which I’m quite grateful for actually, it’s been nothing but rain here for months so I’m excited to have red shoulders.

Next thing I know it’s Monday again.  I didn’t give myself enough time to make juice this morning so I figured I’d do that for dinner.  Another beautiful day, it was easy to get on the road and open the sunroof.  I got to work and had some Teeccino in tow.  Teeccino is a coffee alternative, I gave up coffee about a month ago.  My boss walked in and gave me a face, “that looks like you scraped it up off the parking lot.”  I half laughed, was that suppose to be a joke or was he serious?  Later he told the medical assistant the same thing, she replied to him “it’s probably juice, Corri’s been juicing.”  I missed a very interesting Friday, apparently one of our patients (that the doctor knows personally) had begun juicing and had lost 20lb.

Sitting in my office the medical assistant beeps my phone and says “can you come back here please.”  Awesome, called to the “principal’s” office on Monday.  I get back and she and the doc are staring… “uh… what’s up?”  I ask.  “What kind of juicer do you have?”  My boss asked, “A Hurom slow juicer, why?” I respond.  Turns out he’s looking into buying a juicer for the office.  The Medical Assistant told him how much she wanted to start, then the patient on Friday and now he learns Hubby and I have been at it for a month, it was the perfect “storm.”  My boss is great in the fact that he wants us all to be healthy, he gives us extra time during the day (paid I might add) to go for a jog or a walk or to a gym to workout.  He’s an Orthopedic doc so he’s into fitness.  Anyway, he saw it as a way to help us, add some health to our lives and I’m sure it’s a tax write off too.  He asked me to go with him to Sur La Table at lunch to look with him.

Come lunch time, we head over.  I tell him about Hubby and my journey, he tells me about the patient who lost 20lb.  We get to the store and the only juicer there is the Hurom.  I tell him all about it, how it works even the sales person came up and asked me if I had a job! LOL  I guess I was doing a good job selling the product. 😉  When you love something, you love it, I guess it showed.  He bought it for the office!!  I am giddy!  I ran to the store picked up some produce and came back and made everyone juice.  Now I don’t have to stress myself out if I didn’t make juice for the day before heading home!

I never did hear from that job I applied for.  Then my boss bought a juicer for us… I heard the answer to my prayer loud and clear.

Hubby and I have been juicing since last week but really changed everything on Sunday.  Don’t get me wrong, we have been doing smoothies every morning and we eat fairly healthy as a whole, but Sunday was a turning point.  We started juicing as our main source of nutrition, have eaten very little else, and have been starting to feel the goods and bads along with it.  This will not be a glamorous list, but it’s true and if you decide to get into major juicing then these are some things you can expect.

First off let me give it to you straight as far as what is going into our mouths.  Every morning we start out with a smoothie, that used to be made with raw milk, now I’ve been using water.  I add a banana, kelp, spirulina, dulce, carob and wheat grass powders to it, with a little stevia and blend.  I drink this on my way to work and it fills me up.  We wake up and juice as well.  We juice what we have and right now we have abundance because we wanted to not feel “deprived.”  We juice most of these things together: kale, chard, celery, cilantro, parsley, broccoli, carrot, apple, ginger, beet, kiwi, strawberry, pineapple, jicama.   We don’t always add everything, the kiwi, pineapple and strawberries are eaten when we want something sweet.  Last night I cut up pineapple, kiwi and a banana and it was so good, plus it got rid of that sweet tooth.  We have had bone broth soup, I ate the last of some organic crackers I had at work, we’ve snacked on nuts, drank tea, even have peanut butter (all these are mainly organic too)… so we’re not going “crazy” but we are also not eating a whole lot other than juice.  We also just got an order of Teeccino in, oh my goodness this stuff is my favorite!  We are not drinking raw milk, we aren’t eating much meat in fact I haven’t had any since Saturday, we do plan on eating our eggs, and big huge salads!  I think the main thing here is staying off processed foods, processed meats and sugar and increasing juicing and fresh raw veggies and fruits.  Ok so that’s the lifestyle, I almost called it a “diet.”  It’s not…it’s a lifestyle.

Lets jump right into the positives, well positives so far that is.  First off I notice my body is actually wanting the juice.  You actually feel it energizing your cells and I think my body likes that. 🙂  When we juice I get a weird giddy energy, I want to drink the juice really badly.  Second, I notice higher energy levels.  That said, today I don’t feel that as much.  There is a certain detox period, that will be covered in the cons section.  The energy levels are super high after drinking the juice.  Hubby and I spent tons of time outside Saturday, came in and juiced and all of a sudden we were back up cleaning our house.  I also feel happier, I don’t know how to describe it, but I do feel a bit “lighter” in the head and heart.  My craving for sugar is reduced drastically.  I’m a sugar-aholic, Hi I’m Corri and I’m a sugar-aholic.  I actually remember a doctor telling me to try to stop eating sugar in high school, I laughed… oh if I would have listened!  Anyway, I notice that I am not tempted like I use to be or would be if I went on a “diet.”  A patient brought in some thank you caramels yesterday, they stare at me every time I walk in the break room, but I don’t have the urge to grab one like I used to.  I mean I can stop the whole positive section with this alone!  This is huge, especially for me.  I think this can prove that my body is getting all it’s nutrition and it doesn’t have to crave something, because it’s getting all it needs.  I am also having very regular bowel movements.  I consider this a plus.  I am satisfied, I’m not generally hungry, there are some occasions this is not the case but for the most part I’m full.

Now the cons.  I’m going to start with the most unpleasant, gas.  I don’t know what it is about eating raw food, but when I started looking around at people eating a new raw diet, the big complaint was gas.  Yesterday was worse than today, and I suspect it goes away, but maybe grab some lavender oil in some type of spray bottle if you work around others. 🙂  Diarrhea, really do I have to say much more?  It’s not horrible, and it didn’t start right away but there is generally a day or two where this might be a time you want to have a bathroom close by.  Headaches, I’m starting to get them more.  I think it’s from the sugar honestly, but it could be a number of things.  See when you go through something like this, there is most certainly a detox period.  In the movie Fat, Sick and Nearly Dead, Joe says that he wanted to stay in bed the first two days of his juice fast.  You feel a disconnect from the world, but also you are going through some major body changes.  Especially if you ate pretty rotten up until the point of the fast.  Hubby and I ate pretty well, sure we still enjoyed a treat here and there… but we didn’t live on McDonald’s and Taco Bell before doing this, in fact I can’t remember the last time I’ve even had them (in my 20’s I lived on that junk).   If you do, you might want to take a couple of days off and allow your healing to begin, alone.    Today I’m hungry.  I don’t know what it is, but I am.  I am also pretty tired today, again this could be a detox thing as well.  So combined with a headache, hunger and the tired I’m a little grumpy.  I want to stress A LITTLE, I’m in no way shape or form the type of grumpy I used to be (which is a huge pro).  OOPS! I forgot to mention I have a bit of a foggy head by the end of the day, that happened to me yesterday too.  And I’m dealing with some body acne, again I’m sure this is detox, this stuff has to get out of my body some way.  I guess my skin is taking the brunt of it for now.

I think that getting the right nutrition packed into juice, my body is finally on a path of healing.  God‘s way of healing, not some voodoo or some pill.  God’s creation is allowing me to become healthy again and I am forever grateful for that.  Over all I feel absolutely amazing!  I’ve been telling my coworkers all about it, I want everyone to hear about this.  I feel renewed, I feel healthy and oddly enough I keep thinking the weight has already dropped off because I just feel lighter.  Can’t be a bad thing!
